Mini Rolo Cheesecakes


Ingredients

For the Crust:

  • 1 cup chocolate cookie crumbs
  • 3 tbsp melted butter

For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • ½ cup melted milk chocolate

For the Topping:

  • 1 cup mini Rolos
  • ½ cup caramel sauce
  • Chocolate shavings (optional)

Instructions

1. Prepare the Crust:
Preheat the oven to 325°F (160°C). Line a muffin tin with paper liners. In a small bowl, mix the cookie crumbs and melted butter until combined. Press a tablespoon of the mixture into the bottom of each liner to form the crust. Bake for 5 minutes and let cool.
